Who We Are
Started in 1999 as a little red trailer serving barbeque...
25 years later, Gracie’s BBQ has opened up Vallejo Brewing Company, a small-batch craft brewery and seltzer cocktail bar, whose main goals are to provide for the community of Vallejo and serve high-quality, fun craft beer and seltzer cocktails with Heretic Brewing Company’s previous Head Brewer, Andrew Conlon.
The good news? You can order our delicious, award-winning BBQ from Gracie's BBQ to pair alongside a pint of IPA or Pilsner.

What is a Seltzer Cocktail?
We brew a high-alcohol, delicious, clean seltzer, made with a special yeast, sugar and nutrients, and filter that seltzer to make a crisp, alcoholic base for our cocktails with high-quality, fresh ingredients.
